Have a very Sherry Christmas with Tom, Tio Pepe and friends

At Three Wine Men we are all planning to have a very Sherry Christmas as we are huge fans of it! The greatness of Sherry is that there is something for every palate from the bone dry to the sumptuously sweet with a sweeping panorama of styles and flavours in between.

Tom has chosen three of his favourites to create his own twist on a trio of Sherry cocktails that you can easily create at home to ensure that your house is the place to be this festive season.


The perfect aperitif – Tio Pepe Fino

Pale golden yellow in colour and if you love your Sherry as dry as it comes then this is the one for you.  On the nose it has sharp yet elegant aromas of almonds and on the palate green olives and green apple.  Fino should be served chilled and matches beautifully with toasted almonds, bruschetta, fish paté or young cheese.  A fabulous start to the celebrations.


The nutty one – Gonzalez Byass Alfonso Oloroso

Due to its time in contact with oxygen, Alfonso is a golden amber colour.  On the nose intense aromas of hazelnuts and walnuts of the Palomino grape variety stand out and as a result of time spent in cask, you can also pick up delicious truffle and leather notes.  Although a dry wine, as you take a sip there is a surprising sweetness to the finish with slight vanilla touches.  This sherry is perfect with winter stews, cured meats and the as the Christmas cheese board comes out experiment with matching it with different cheese combos.


The unctuously sweet one – Gonzalez Byass Nectar Pedro Ximenez

Served on its own this is Christmas in a glass!  A dark ebony colour, on the nose rich aromas of fruits such as raisins, figs and dates accompanied by honey, syrup and fruit preserve.  On the palate, it is velvety and smooth with good acidity which alleviates the sweetness.  You can serve slightly chilled on its own but for a decadently easy pudding try it poured over vanilla ice cream or with dark chocolate cakes or caramel-based desserts.
